The Boring Brown Bag

Thanks for all of the suggestions yesterday about what on earth to do with the "thrones". Irv and I are looking at all of the suggestions and I'll let you know what we decide.

When I worked at my last job, we had an hour for lunch. Most of the time I would head for a restaurant and have something to eat. During the summer I would bring my lunch and go park by the lake and eat.

With this job, I only get a half hour for lunch...that means there is no time to go sit at a restaurant to eat. I bring my lunch every day. When the weather is nice, I drive over to the pond in the neighborhood across from the office to eat. In the winter, I sit in the lunchroom.

Bringing a lunch every single day creates a bit of a challenge.....like what the heck do you bring to eat day after day after day?

I bring soup, leftovers and almond butter and jelly sandwiches......and I am getting sooooo tired of it. I am not very creative when it comes to meals and that includes lunch. I eat a lot of salads, but I save those for dinner.

So, my friends....whether you work at home or out of the home....what do eat for lunch every day?

Well, I don't need a lunch as I don't work, and I don't eat lunch as a habit. But I was on twitter and someone tweeted me lunch ideas, but I forgot who it was so I did a search and these came up and maybe you can get ideas from one of these guy's sites.

Ugh, I HATE preparing lunch for work. I am so lazy when it comes to it. I'll go for weeks making sandwiches with some kind of lunch meet on them (always the night before because there's never time in the mornings) and then I'll get tired of it and bring Lean Cuisines or Asian noodle bowls or whatever else I can throw in the microwave. Sometimes I bring leftovers. Sometimes I'd rather buy something in the cafeteria at work, but the pain in the a** thing is that it's cash only....and I hardly ever carry cash...check card please! And it's a government job! Why no cards allowed?! *sigh*
Anyway, today I have a leftover turkey burger. But it's not that exciting. At least I have my book to read!

I'm a snacker, so cheese and good bread, fruit and chocolate.

I have carried my lunch when I work as a naturalist for years and because we eat while walking or sitting in the woods or on the beach lunch has to be very portable and able to withstand being carried with only a freeze pack so I've gotten pretty good at it. I also pack lunches for all our painting days and family walks, etc.

I try to change it up between sandwiches and finger foods like celery with peanut butter or herb goat cheese, carrot sticks, etc. For me it's all about color and texture ;-)

I use hummus and shredded veggies on sandwiches or make a bento box type lunch with a pretty arrangement of apple slices, carrots, nuts, cheese, whatever I have around the house. I mix it up every day so I don't get bored.

For my week long walk I have been packing veggie or peanut butter sandwiches, cut up fruit, an energy bar and some nuts and dried fruit as well as lots of water. The old Moosewood cookbook has some great sandwich ideas in it for vegetarian and hearty sandwiches that travel well and taste great.

Good luck and happy lunching!

I LOVE these ideas, Mary! I'll have to take a page from your book!

I also like those ideas. Since most of my work is at home (thank you for tele-commuting!) I still have to do lunch. Some days I only get 15 minutes so anything I have has to be quick. I do a lot of leftovers...salads (but not as many pastas or rice dishes because they are carbs and I'm cutting back on those). If I stir-fry, roast, or grill veggies, I try to make extras for lunches. I also make my own salad dressings because of my allergy to soy products--so I stick with lemon juice or lime juice-based vinegrettes. I also eat a lot of fresh fruits...I don't think I'm very helpful...

Sorry but I don't think I can help on this one. I usually just scrounge something up from whatever is in the fridge or pantry.

I love soup, so in colder weather I would take a can of soup to school. Another thing I love that is easy is a baked potato. I would bring my potato in a plastic bowl with a lid. I would nuke the potato in that bowl, then add salsa and cheese. Yum!

lunch is my meal of the day, so it's usually a good one and nothing you can really pack...that would be dinner. Fruit, cereal and nuts usually or soup. I guess you're pretty much on the right track. Have you looked into some gourmet soups prepared at the higher end supermarkets? They're usually too much for one serving and freeze well if you buy a few and alternate.

some days i skip lunch completely (bad for diabetics to do that but...). sometimes i'll eat instant oatmeal. other days, canned soup (progresso or something that's relatively healthy), salads, tuna on crackers, peanut butter and celery, fruit, leftovers (there's not usually much in the way of leftovers at our house).

Mary - what is a bento box?

I eat Lean Cuisine every day. They have some really really good ones!! When I forget my lunch or need to go to the grocery, I eat at the restaurant...which I never get tired of! Our food is full of of butter and it is SO good! It is hard to resist it sometimes when I don't forget my lunch.

I like to have cereal (my favorite is special k red berrie) sometimes for lunch. It kind of curbs my afternoon sweet tooth and the middle of the day is a good time to have a carb packed meal!

Hi, Kathy, I was just reading the new Vegetarian Times and it looks like they have a "healthy" lunch challenge and you can find lots of ideas on their website. The lunches I saw in the magazine looked delicious! Bon Apetit! Silke
